Mujaku Junmai Daiginjo is described as ‘the sake of God’s miracle’. 2016 annual production is merely 1000 bottles. It is a very rare and premium vintage sake with high aging potential. Unlike other sake with limited ageing ability, the more you age Mujaku, the better the performance, like a fine wine.
Mujaku is only made of 100% best rice from Ise Jingu with a very low polishing ratio of 18%. Using the purest underground spring water from the Nisiki River, the hard water is rich in minerals to achieve the highest quality, and ageing potential. Mujaku 2016 is already aged 18 months in the winery, and evokes a rich aroma of ripe melon and layers of fresh berry. The palate is full and supple, with an incredibly smooth texture.
Mujaku is the highest glory of Japanese sake without a doubt.
