Bin 707 perfectly replects the Penfolds "house style" through a Cabernet Sauvignon lens: intensely-flavoured fruit, aged in new oak barrels and expressing the typical characteristic of Penfolds: by blending multiple vineyards and multiple regions across Coonawarra, Barossa Valley, McLaren Vale and Padthaway.
The first vintage produced of 707 was 1964, and it remains to this date among the best Australian's Cabernet Sauvignon.
The best parcels of fully ripe Cabernet Sauvignon are picked and fermented in open wax-lined stainless steel fermenters. Partial barrel fermentation is followed by maturation in new American hogsheads for 20 months.
