Tohu has been producing wine since 1998 and growing their own grapes since 2002. In 2012 a new winery was built in Awatere Valley, the winery marked the beginning of a new era for expanding the wine business.
Grapes from this wine are sourced from blocks located in the upper, mid, and lower areas of the Awatere Valley.
Once at the winery the grapes are pressed into stainless steel tanks for cold settling. Fermentation is carried out at cool temperatures allowing the wine to retain its bright aromas. After completion of fermentation the wine is left to settle on yeast lees for a short period before being racked again into stainless steel tanks for maturation.
