Single vineyard in the Paardeberg Mountain South of Malmesbury in the Swartland appellation. The vineyard was planted in 1984, all bush vines and dryland farmed. Since 2013 organic farmed methods are used, with no chemicals sprayed on the vines and soils. The Soils are a mixture of Decomposed Granite and Clay with south-west facing slope on altitude of 280m.
Age of vines: 34 Years old
Vinification: 100% Oxidation of the must was allowed before fermentation. The grapes were 100% whole bunch fermented (lightly crushed) with punch downs once a day, than moved to 8 weeks of skin contact and stems without SO2 addition. Later the wine was basked pressed into 1600L concrete eggs and aged for 12 months on the gross lees, than racked and bottled. No filter, no finning’s or SO2 added to the wine
This wine is not filtered or finned resulting in a bright orange color that is cloudy due to the presence of natural occurring yeast and grape skins.
It's recommended to let the bottle stand for 6h before drinking. The residual CO2 will dissipate naturally over the consumption of the bottle. It can also be decanted to help aerate quickly. Organic, Natural wine.
