Dominio de Pingus is a small winery in Ribera del Duero founded by the Danish winemaker Peter Sisseck. The wines are made from Tempranillo divided in several small parcels of old vines in various locations that produce very low yields, resulting in a minute quantity of wine. Around 5 hectares of vines are grown organically and biodynamically since 2001.
The second wine, Flor de Pingus is 100% Tempranillo and made from fruit harvested from 16 different vineyards in the La Horra zone.
In the cellar, the wine is macerated and fermented with native yeasts and up to 40% whole clusters for two to three weeks. After malolactic fermentation is complete, the wine is racked into mostly used barrels and mature for around 14 months.
