Fedellos do Couto is a young project, started in 2013 by winemakers Curro Barreño, Jesús Olivares and Luis Taboada (whose family has owned the Couto manor for generations). They lease a small selection of vineyards which are farmed organically and worked by hand on very steep terraces along the rivers Sil and Bibei, with a range of grape varieties, altitudes and sun exposure.
Cortezada is made from 100% Mencia, sourced from 15 to 70 years old vines that are untrained. DOC Ribeira Sacra
The grapes undergo fermentation in stainless steel tanks with indigenous yeasts. They are then aged in old barrels, mainly 500l demi-muids before being bottled unfined and unfiltered. Organic
