Established in 2001 the vineyards are located on the Northern valley of the active volcano Etna, where the best single vineyards are located.
The estate farms 13ha of vines trained with the bush vine system grown organically and biodynamically. The new vineyards are planted with ungrafted vines in volcanic soils. Soil tilling is not practiced to avoid evaporation of the scarce water from the winter rains.
Susucaru is the entry level red, made from 85% Nerello Mascalese and the rest is a blend of Nerello Capuccio, Minella Nera, Allicante Bouschet, Minella Bianco. All grown in 50+ years old vines. The wines are 100% destemmed, light crushed and fermented with indigenous yeast in large concrete tanks. The wine is preserved in contact with the skin for 60 days. Maturation are also done in large tanks.
