100% destemmed, and the extraction is light like an infusion, with cold maceration and fermented with indigenous yeast. Matured for 12-15 months in up to 50% new French Burgundian oak.
A bouillabaisse of bright red iron, silty clay loam basalt. Rock-Sandy rather than stony, Worden Hill was formed by a landslide of volcanic rock that weathered in place and is now just a couple of thousand years from becoming topsoil.
Fresh and snappy with black cherry, layered with blueberries and hints of smoke wrapped in a silken mouthfeel.
