Jean Marie Fourrier is the 4th generation to run this 10 hectares domaine located in Gevrey Chambertin. Having been working alongside his father Jean Claude since 1989, Jean Marie also had internships with Henri Jayer and Veronique Drouhin in Oregon, and in 1994 took over the Domaine from his father at only 23 years of age.
The vineyards are composed of mainly old vines from 60 to 100 years of age, with the grapes produced from younger vines sold to negociants. Jean Marie does not use chemical fertilizers in the vineyards and treatments are used only when necessary.
In the winery vinification is made by individual plots. The grapes are macerated at low temperature for 3-4 days to extract light aromas and color, followed by fermentation in oak barrels with no more than 20% new. The wines are mature with the fine lees for 18-20 months and bottled without addition of Sulfites. During the winemaking the wine is protected against oxidation and bacteria spoilage with CO2.
