Jean Chauvenet is a 9-hectare, family-owned estate managed since 1994 by Christine and Christophe Drag, after the retirement of Jean Chauvenet, who founded the business in 1964.
Since 1994 the domaine has minimize the use of chemicals in the vineyard and have worked towards organic and sustainable viticulture. Cover crop is being used to reduce the effect of erosion.
NSG 1er Cru Les Vaucrains around 1800-2400 bottles are produced from a 0.42ha parcel of 80 years old vines, planted directly above Les St Georges.
This is considered the "grand cru" of the domaine, the most structured, dense, and age worthy wine they produce.
Vinification is classic with 100% destemming and a brief period of cold maceration followed by two to three weeks staging in large wooden vats.
After fermentation the wine is moved into small barrels where the malolactic occurs. The maturation last around 18 months in 30% new oak and the wines are bottled without fining or filtration.
