Separated from Clos St Martin, the vineyards of Chateau Canon were purchased in 1760 by Jacques Kanon, who made his fortune as a Privateer at the time. Jacques expanded the vineyard holdings to almost the size of the Chateau vineyards today.
A decade later the Chateau was sold to the Fontemoing family who run it until 1857. The Chateau was named after Chateau Canon in Fronsac also property of the Fontemoing family.
Between 1857 and 1919 the Chateau had multiple owners until Gabriel Supau acquire the Chateau as a gift for his daughter and her husband Andre Fournier.
The Chateau stayed in the Fournier family until 1996 when was purchased by the luxury brand Chanel. Since than the majority of the vineyard was replanted, and the dilapidated underground cellar was rebuilt and re inaugurated in 2015.
Nowadays the Chateau has 34 hectares of vines planted, with 24ha classified as Premier Grand Cru Classe. The vineyard is planted with 70% Merlot and 30% Cab Franc.
In the cellar the wine is fermented from 28-32 degrees in 24 temperature controlled stainless steel vats of various sizes.
The wine ages for 18 months in 50% to 60% new oak barrels.
