Fruit from a 3.8Ha single parcel, with south east exposure, and Oolitic limestone and marl soils.
Les Gravières is a large Climat of 29.46 ha. Its name speaks for itself, the soil is rich in gravel and limestone from the Combe de Saint-Aubin. It is a historical parcel for the Domaine.
After a sorting in the vineyard and in the cellar, the grapes are destemmed and directly vatted. A pre-fermentation cold maceration of 5 days is carried out then the spontaneous fermentation starts. The fermentation lasts 3 weeks and the wine is then put into oak barrels (25% new barrels) for 12 months. Bottled without filtration or fining. Organic
