A relatively new cuvée that blends all 13 permitted varieties of the appellation (including white varieties) but a higher proportion of Grenache. Many of the varietals used come from centenaries vines planted in sandy and pebbles soils.
Les Apotres was manually destemmed (berry by berry), followed by 4 months of skin contact in amphora without any addition of sulfites or temperature control.
The skins are than removed and the wine is matured in clay Amphoras for another 18 months.

It reveals layered aromas of dark and red fruits, spices, flowers and garrigue. The ample structure already offers rounded tannins and a superb length.
