With no vineyards in the family Sylvain Pataille had to start from scratch when he felt he wanted a domaine of his own. He went to wine school in Beaune at the age of 14 and then to wine university in Bordeaux in order to become an oenologist.
His first vintage was in 1999, when he was still working as an oenologist at the lab. Having qualified as an enologist in 1997 he still consults for another 20 domaines in the Cote D’Or among them Tortochot and Chateau de la Tour.
Nowadays the domaine farms 15ha of land in Marsannay.
Sourced from 3ha of vines planted in between 1950 and 1980 from multiple parcels.
Fermented with 25% whole cluster and indigenous yeast, the wine is aged for 18 months in a mix of 2 to 10 years old barrels plus several old demi-muids. Unfined, unfiltered, low sulfur added only at bottling.
