Jean Chauvenet is a 9-hectare, family-owned estate managed since 1994 by Christine and Christophe Drag, after the retirement of Jean Chauvenet, who founded the business in 1964.
Since 1994 the domaine has minimize the use of chemicals in the vineyard and have worked towards organic and sustainable viticulture. Cover crop is being used to reduce the effect of erosion.
NSG 1er Cru Les Damodes around 1500 bottles are produced from a 0.28ha parcel of 65 years old vines.
This is a more delicate Nuits St Georges, with a spiced and purity typical from the neighbors in Vosne Romanee.
Vinification is classic with 100% destemming and a brief period of cold maceration followed by two to three weeks staging in large wooden vats.
After fermentation the wine is moved into small barrels where the malolactic occurs. The maturation last around 18 months in 20% new oak and the wines are bottled without fining or filtration.
