The 2000 Dom Pérignon P2 opens in the glass with aromas of waxy citrus oil, warm bread, dried fruits, fresh peach and iodine. On the palate, it's medium to full-bodied, satiny and textural, with a sweet core of mature fruit, ripe acids and a sapid, elegantly toasty finish. As I wrote earlier this year, the 2000 vintage delivered a precocious Dom Pérignon, and this recently disgorged rendition has really benefited from the additional time sur lattes, acquiring notably more complexity—while retaining more energy—than the original disgorgement. Winemaking
The uniqueness of Dom Pérignon vintages lies in their evolution through distinct moments called “Plénitudes.” P2 is the Second Plénitude of the Vintage 2000, crafted over 16 years, showcasing a sharp intensity and peak energy.
The year featured contrasting weather, with cold, rainy spells followed by warm, stormy days. Although summer was often gloomy, a miraculous change at the end of August led to favorable conditions for harvest.
Initially presented in 2008, the Vintage 2000 revealed a balance of freshness and ripeness. In its Second Plénitude, P2 2000, it now expresses renewed energy, intensity, and depth.
On the Nose: The bouquet is ripe and generous, with warm aromas of hay, brioche, bergamot orange, and russet stone fruit, accented by smoky notes.
On the Palate: The vibrant opening leads to a complex, tactile experience. Its distinguished viscosity enhances the wine's contours, with a lingering, bitter finish of liquorice and toasted malt.
Food Pairing: To highlight P2 2000's coherence, pair it with strong beef stock or whelk ravioli. It complements rich dishes like fried artichokes, sea bass, peach salad with Kombu, and caviar-topped potato chips, creating a pointillist menu that enhances the wine’s sensations.
Winery
Dom Pérignon is only available as a vintage champagne and is only produced in exceptional years. Each vintage is a creation, singular and unique, that expresses both the character of the year, and the character of Dom Pérignon. After at least eight years of lees ageing in the cellars, the wine enters its first phase of interest, Plenitude 1, showing quite youthful fruit and broad texture from the lees contact. The signature Dom Pérignon aromatic is that "hint smoky" character a result of the reductive winemaking where they go to extreme lengths to keep each step of the winemaking process free of oxygen.
With every sip of Dom Perignon you always have that purity of fruit character, depending on the vintage you normally see the Pinot Noir fruit dominate, which are those red fruits like raspberry, peach and dark cherry. The Chardonnay adds a supporting layer of chalky texture and delicious fruit in the yellow spectrum like plum, apple and tropical notes of pineapple.
