The magnum 1997 Recioto della Valpolicella is a tremendous wine that catapults you to a whole new level of intensity and is, honestly, unlike anything you will ever taste. It pours out of the bottle with inky, impenetrable blackness and the thick consistency of olive oil. Corvina, Rondinella and Molinara grapes are harvested and air-dried for up to half a year, then aged carefully in 100% French oak. The bouquet opens in slow motion. Tones of chocolate, hickory smoke, prune, cinnamon cake, prune, black plum, root beer, crushed granite and licorice have the bright intensity of primary colors on a painters’ wheel. The mouthfeel is solid, thickly concentrated and delightfully sweet. The most magical aspect of the wine is how that sweetness hits your senses. It’s as if you don’t expect it: It creeps up on you suddenly. There is a tight tannic backbone that keeps the wine stitched firmly together. Almost indestructible, a wine like this will age longer than most.

Winemaking


For years, Laurent Tribut´s wines were actually made in the Dauvissat cellars, in the same manner and spirit as the now legendary Dauvissat wines. Recently, however, Laurent moved his cellar to the town of Poinchy, just outside the town of Chablis. He carried with him the traditional Dauvissat methods of hand-harvesting and fermentation.

The fermentation is in temperature-controlled enamel tanks and a percentage of the wine is matured in old oak barrels. Fining occurs 5-6 weeks before bottling, and a light filtration is done at the time of bottling. 

Winery


Laurent Tribut joined the winemaking tradition of René Dauvissat when he married Marie-Clotilde. The Dauvissats strategically acquired prime AOC Chablis vineyards for their children, including Laurent and Marie-Clotilde. Their 12.5-acre domaine comprises AOC Chablis and premier cru vineyards like Chablis Beauroy, Chablis Montmains, and Chablis Côte de Léchet. 

With a focus on sustainable practices, Tribut minimizes fertilizers and phytosanitary treatments, maintains hand-harvests at 3.7 tons per acre. Nestled near Vincent Dauvissat, the family resides in a restored farmhouse surrounded by vineyards. Their daughter Solange now contributes her winemaking talents to the family business.
