酒莊創辦人 Jean-Michel Guillon 曾是巴黎的航空工程師，負責精密嚴謹的飛機維修工作。1980 年正式退休後，一次偶然的布根地之旅徹底改變了他的人生軌跡。他被這裡迷人的風土與黑皮諾（Pinot Noir）的靈動深深吸引，決定舉家遷往 Gevrey-Chambertin 從零開始，在退休後的「第二人生」中踏上艱辛而精彩的釀酒之路。

在創業之初，Jean-Michel 幸運地獲得當地名家 René Galland 的協助，更拜入傳奇大師 Henri Jayer 門下。這深深影響了他的釀酒哲學，成為了他一生堅持的準則：絕對尊重葡萄園生態、嚴格人工篩選、長時間緩慢浸漬，以及採用 100% 全新法國橡木桶。這種大膽而對品質極致追求的精神，奠定了酒莊日後在布根地的崇高地位。
