Seven Springs Vineyard Chardonnay
100% Chardonnay from the Seven Springs Vineyard in Willamette Valley.
Organically farmed, non-irrigated Dijon clone 95 and 76. Planted in 2012 in jory and nekia silty clay soils over volcanic basalt.
The wine was whole cluster presses and allowed to brown for 12 hours before addition of sulfites. One cut press was made and the hard press was separated without addition of sulfites. After 24hours of cold settling on organic yeast the wine was racked of all solids into a temperature controlled stainless steel tank with a fermenting pied de cuve. After primary fermentation started the wine was racked into oak and was fermented dry in 10 days. Malolactic was fully completed by early February. It aged for 11.5 months in 50% new oak from a 350L Damy Vosges casked toasted with long light specifications. Another puncheon of 3rd use of Damy Vosges was used for the rest of the wine before being racked off lees into stainless steel for a second winter. The wine was cold stabilized, bottles unfiltered on February 11.
