Winemaking
- The age of the vine is 35 years old.
- Manual harvest, sorting on the vine, then in the vat, and finally pressing (pneumatic press) to obtain a slow extraction.
- The grapes are put into French oak barrels of 228 liters (15% of new barrels).
- Use malolactic fermentations with yeasts and native bacteria.
- Aging will be long on fine lees for 16 months without stirring.
- One month before bottling, the wine from different barrels is placed in a stainless steel tank for blending.
- Filling is done before labeling and light filtration before bottling. Bottling is done according to the lunar calendar.
Winery
Vincent Girardin inherited two hectares of vines from his parents and started his winery business in 1980 at age 19. His passion for vine work and ambition to craft exceptional wines quickly garnered acclaim.
Focusing on Côte de Beaune's finest whites and reds, Girardin's innovative approach involved sourcing grapes from like-minded growers to meet rising demand.
By 2000, a transformative shift towards terroir expression ensued with winemaker Eric Germain. The sale of his enterprise in 2012 saw continuity under Mr. Nié, preserving Girardin's legacy. Their prestigious range spans 9 Côte de Beaune villages, showcasing sustainable viticulture in esteemed appellations like Meursault and Pommard.
